This homemade guilt free chilli is so delicious and such an easy crowd pleaser. I actually like to prepare this in bulk (right before you add tomatoes) and freeze it in portions so that I can use it anytime I need to make spaghetti, lasagna, etc. If you do decide to prepare it in bulk, you will of course have to increase all the ingredients listed below. : )
You'll need:
2 pounds of ground beef (I prefer extra lean ground beef or chicken but any type of ground meat you prefer will do), 1 TB of butter, 2 cloves of minced garlic, 1 large chopped onion and 2 large chopped tomatoes (small chunks), 1 large shredded carrot, 2 ribs of celery chopped into small pieces, 1 bay leaf, 1 can of chick peas (kidney beans or any beans you prefer), 1 small can of tomato paste, 1 can of chicken broth (beef or vegetable stock, your preference), 1 TB of paprika, salt and pepper.
Heat pot using medium-low heat. Melt butter in pot.
Mince garlic:
Add garlics to ground beef:
Add chopped onions:
Stir fry for 5 or 6 minutes, until beef is browned:
Add chopped celery, combine with beef:
Stir fry well so everything is combined nicely:
Combine:
Add a can of tomato paste, chicken stock and the paprika:
Stir:
Add Bay leaf:
Combine:
Add chick peas or any other beans:
Stir. Bring to a bubble. Then simmer in low heat for 10 minutes.
10 minutes later.... Voila, Bonne Appetite!
