Hello there! The letter "W" is the Crowd Pleasing Appetizer for today's A - Z Blogging Challenge. Yes, the challenged finished in April but I'm determined to complete it.. almost there! I will show you the secret in how to make these MouthWatering, Plump, Juicy Stuffed Mushrooms, they are so good, you will beg for more..
All you need are as follows:
24 whole fresh cremini mushrooms
1 TB vegetable oil
1.5 TB minced garlic
5 oz cream cheese, softened
¼ tsp garlic powder
½ cup grated Parmigiano Reggiano cheese
Bread crumb mixture: ¼ cup seasoned bread crumb and ⅛ cup Parmigiano Reggiano
¼ tsp ground black pepper
¼ tsp onion powder
¼ tsp ground cayenne pepper
2 stalks finely minced green onions
1 cup crab (or 2 sticks minced imitation crab which is made of white fish)
3 TB Melted butter
1 TB lemon juice
cooking oil for baking sheet
Direction:
Preheat oven to 350F and brush cooking oil on baking sheet. Clean mushrooms with a damp paper towel or give them a quick rinse, do not soak them in water as they are very porous and will suck up all the water and become tasteless. Carefully break off stems and cut off and discard tough end of the stems.
Place mushroom stems, green onions and garlic in the food process,
pulse until finely chopped:
Heat pan with oil and add mushroom stem mixture:
Cook for a few minutes until there's no more moisture or liquid. Set aside to cool:
In the meantime, finely chop the sticks of imitation crab if using:
In a medium bowl, combine cream cheese, garlic and mushroom stem mixture, imitation crab
and add black pepper, onion powder, garlic powder, cayenne pepper and shredded cheese to the crab mixture:
Mix to combine:
Then place mixture in a plastic bag or a ziplock bag:
Making a small cut at a corner:
Set up the mushroom assembly line as below including:

2. Dunk mushroom in lemon/butter mixture, make sure the flavourful juice cover every square inch on the mushroom exterior:
3. Then smother the mushroom generously with bread crumb mixture:
4. Place them on oiled baking sheet, place in the oven and bake for 20 minutes.
