Hello you! Are you ready for some insanely delicious crowd pleasing appetizer that will blow your taste buds? Oh So Heavenly Light and Flaky Curry Puffs will do just that and today is day 8 or letter "H" of the A - Z Blogging Challenge, the theme is Crowd Pleasing Appetizers.
All you need are as follows:
1 roll of 1 package of frozen puff pastry (thawed)
1 clove of garlic, minced
½ large red onion, finely diced
1 small potato, finely diced
½ cup of frozen vegetables
1 TB curry powder
1 TB water
½ tsp salt
1 beaten egg (egg wash)
Directions:
Filling :
Finely diced potato and onion:
Heat pan with oil on medium low heat, add red onions and garlic, stir until fragrant, a couple of minutes
Add potatoes and frozen vegetables, curry paste (mix curry powder and water) and salt.
Stir fry for a couple of minutes, put the lid on and let it cook on low heat for 10 minutes. And it's ready. Set aside to cool, around 20 minutes.
Unroll the puff pastry, cut dough into 9 circles. I used a lid of a pasta sauce jar that is around 2" in diameter.
Take the left over dough:
and make it into a ball:
Flatten
and roll out again, cut into as many circles as you can:
Continue as above until you get 15 pastry rounds.
Add filling to dough:
Wrap it up like this:
Then that:
and finally this. Make sure everywhere is firmly sealed:
Heat the oven to 400F or follow the puff pastry package instructions. Meanwhile, brush oil on the baking sheet and place completed curry puffs on top. Brush egg wash on each puff.
Place in oven and bake for 20 minutes, all done!
