I have a confession to make. Not everything in my Tarantulas, Ostriches and Alligators Oh My! post is foreign to me. I grew up seeing BBQ wild hogs hanging from store windows and tried pork/beef tongues and still eating whole fish (including the head). So it doesn't come as a surprise that I find this dish just simply delicious and so satisfying to devour.
If you've never tried ox tail soup before and is willing to give it a go, you will be pleasantly surprised!
You'll need chunks of ox tail, slices of ginger, green onions, carrots, potatoes, tomatoes and celery:
Bring a pot of water to boil:
Add ox tail and green onions:
Boil for 10 minutes:
Then rinse and wash ox tail with cold water:
Bring a fresh pot of water and ox tail, ginger and green onions to a boil:
Meanwhile, cut potatoes and celery:
Heat oil in pan, then add chopped carrots and tomatoes - stir fry for 5 minutes:
Add carrots, tomatoes, celery and potatoes to soup:
Bring it to a boil then turn to low heat and simmer for 2 hours:
All done! Mmmmmmmmmm.........
