Bok Choy is extremely nutritious.  It is full of vitamin A, C, K, iron and calcium just to name a few.  In addition, it is one of the lowest caloric vegetables  - you can eat lots without gaining much weight.  To top it all off, you can either eat it raw or it is extremely easy to make.  Here's a very simple way of preparing stir fried bok choy:

  • This is all you need:

Chopped garlic:

Step 1:  Cut the ends off the vegetable:

2.  Wash and rinse well.  Soil and dirt usually hide near the ends, so make sure you wash and rinse properly:

3. Heat pan using medium low heat, add oil and garlic, stir fry until fragrant - a couple of minutes:

4.  Add bok choy, stir fry:

5.  Add salt, stir fry some more:

6. Cook for around 5 minutes or until the leaves change colour:

You can add some fried red onions (really shallots) on top (optional):Lily Daily - Fried Red Onion:shallots
